Kids Rainbow Treats

See the rainbow… taste the rainbow! In a previous article I shared my daughter’s rainbow Backyard Graduation Celebration and today I’m sharing part 2 of that post – the sweet treats that I created for the party!
The festivities were set around this adorable bar cart, adorned by a garland of rainbow coloured balloons by Lux Affairs. The cart was the perfect place to display cold drinks and snacks. Both of my girls are loving rainbow colours right now… so I wanted to create some vibrant treats that were sweet and fun for the kid in all of us!

RAINBOW SORBET KIDS COLADA
Fruity, fun and fizzy… this drink reminds me of a trip to the corner store as a kid. It has it all – sparkling pop, juicy watermelon, creamy sorbet and even gummy candies to top it off! The ultimate sugar rush… it doesn’t get much better than that!
INGREDIENTS
Watermelon Juice
Sprite (substitute lemon lime soda if you prefer less sugar)
Rainbow Sorbet
Sliced Strawberries
Rainbow Gummy Bears + Skewers for garnish
Step 1. I began by mixing the juice and soda in a pitcher along with sliced strawberries.
Step 2. The rainbow theme was in full effect with these gummy bear stir sticks. I used sugar-coated gummy bears arranged in colour order with a strawberry on the end for weight. Beware… this gets a bit sticky… but it’s so worth it!
Step 3. Pour the mixed drink into individual glasses.
Step 4. This is the fun part! Add a generous scoop of the sorbet to each glass… so satisfying!
Top with your stir stick, add a straw and enjoy… cheers to the feeling of forever being a kid in Summertime!

RAINBOW SOFT SUGAR COOKIES
Yanno those round, fluffy, soft sugar cookies you get in the grocery store? They are the cookies you buy for your kids but secretly eat yourself. Well, I’m not ashamed to admit that they are another one of my guilty pleasures… so I was all too happy to recreate them using this unique recipe that yields a softer, cakier cookie texture than your average sugar cookie.
To create a rainbow cookie cutter, I simply used a round one, but bent the bottom to create a flat base. Voila! The perfect rainbow cookie cutter… and you can pipe whichever colours you choose. I didn’t even use a piping bag… I simply added the icing to large ziplocks and snipped the corner to release the icing.
COOKIE INGREDIENTS
3/4 cup butter, at room temperature
3/4 cup sugar
2 eggs
3 tsp real vanilla extract
1/2 tsp salt
2 1/4 tsp baking powder
2 1/4 cups flour
ICING
2 1/2 cups powdered icing sugar
3 tbs room temp butter
3 tbs milk (+ add more to get to a runny enough consistency for piping
1/2 tbs vanilla extract
food coloring
Pre-heat oven to 350°F
Cream together the butter and the sugar in mixer then add the eggs and vanilla and mix until combined.
Stir in salt, baking powder and flour and mix to create dough.
Wrap dough in plastic wrap and chill for 1 hour.
Roll out chilled dough to 1/4 inch thick and cut with cookie cutters.
Bake for cookies on parchment paper lined cookie sheets for 8-10 minutes or until slightly golden.
Cool completely on a wire rack.
Pipe your rainbow stripes with icing.
