Coconut Chia Pudding

My favourite ingredients for a recipe (other than food) are a) that it’s simple and b) that it has limited components. This pudding is right up my ally… a no-brainer! It’s been on repeat in our home – and I even whip it up when we go camping! It’s customizable, which is another thing that I love. You can make it your own and mix it up by adding your own creative (and seasonal?) twists. Best of all – and very importantly, it’s delicious!

Lifestylist Notes On Food: If you’ve been following along, you’ll know that this is ‘Self Care January’. I’ve experimented and had great success with eating Paleo-based. After having a food sensitivities test last year with a natural path, I’ve realized that there are quite a few foods that aren’t ‘a match’ for my body – and eating paleo-based seems to be the best fit for me. It’s a lifestyle where you avoid inflammatory foods. While it’s not something that I haven’t ‘perfected’ (you may catch me eating a cheeseburger from time to time!) I’m excited to make eating Paleo-based a priority to reset my body and start the year on the right foot!

I call myself a ‘lifestylist’, and with that – I choose to embrace the creative process in styling all aspects of life. This includes styling a way of eating that suits my body – and makes me feel good inside and out! When you look at yourself as ‘styling’ your diet, you take on an entirely new and empowered outlook on how you eat. It’s about choice.


The Coconut Chia Pudding Recipe
It’s appallingly simple and also customizable. I made this for a couple of girlfriends who came for a casual brunch. It was a total hit, my husband loved it too… so it’s now a staple!

Base Ingredients

• 1 Can Coconut Milk (Organic is a great choice)
• 1/4 Cup Chia Seeds (Black or White)
• 1 Tablespoon Organic Pure Maple Syrup (Or to taste)

This makes 4 small servings or 2 hearty servings.

Directions
Combine the three simple ingredients above, divide into serving dishes, cover with lids or plastic wrap. Refrigerate for an hour or so – or overnight. The mixture may seem quite liquid, but it will solidify to a thicker consistency in time.

Allow to set and top with a layer of fruit, nuts, coconut, or dark chocolate chips – or mix add-ins right into the batch before setting. This is your chance to get creative and make this versatile recipe your own!

Add Ins
• Raspberries (my fave!)
• Any berry for that matter!
• Any fruit or that matter! Peaches? Pears?
• Cocoa
• Shredded Coconut
• Nuts
• Dark Chocolate Chips
• Extracts for flavour (to replace Maple Syrup)
• Spices such as cinnamon or nutmeg

Feel free to ‘go crazy’ and add in your Collagen powder or supplements!
