Bunny Pastry with Coconut & Cream Cheese

Sweet & easy bunny pastries to impress your guests

When it comes to my baking style… I’m a little Martha mixed with a little Betty Crocker. I want to make something impressive… but it has to also be fairly simple to put together. So when I found this method of using Pillsbury™ Crescent dough to form bunny pastries, I just had to try it. Of course, I had to put my own spin on it, so I added a few unique touches. Purple cream cheese frosting with coconut to make these bunnies extra fluffy tops them all off!



BUNNY INGREDIENTS

2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)

1 egg white 

18 miniature semisweet chocolate chips


CREAM CHEESE TUMMY

1 package (8 oz) cream cheese, softened

½ cup (1 stick) unsalted butter,
softened at room temperature

3 cups powdered sugar
(confectioner’s sugar), sifted

1-2 teaspoons vanilla extract

1/3 cup coconut 


FORM 6 BUNNIES

Heat oven to 375°F. Line 2 cookie sheets with parchment paper.

Unroll the 2 cans of Pillsbury™ dough onto work surface, leaving 1 square with 2 triangles rolled up tight. Set aside.

To make a bunny, separate 1 square of dough into 2 triangles. On cookie sheet, arrange triangles on top of each other with short sides together and long points at top opposite each other.

Fold two points down to make bunny ears and pinch sides to shape it’s neck.

Pull bottom corners of dough triangles up to make feet.

From remaining dough, form a ball for the tail and the nose and press into dough. (See p.24)

Brush with beaten egg white. Bake 10 to 12 minutes or until golden.


CREAM CHEESE TUMMY & TAIL

Place softened cream cheese in a large bowl and beat until smooth. Add butter and vanilla, beat. Gradually add sifted powdered sugar and continue beating.

If you’d like to add some colour to your bunnies, you may want to add a touch of food colouring. I created purple.

Once bunnies have completely cooled, pipe the frosting onto the tummy and tail, and poof to make them look fluffy and add coconut, as desired.

Add 2 mini choc chips for eyes and 1 for nose. Repeat to make 6 more bunnies.
